Snickers Cupcakes...

One day we fancied doing some baking but really wanted to do something extravagant and a little different to usual.

After some thought we settled on Snickers cupcakes. Now you may be thinking that that doesn't sound extravagant at all but these were not just any cupcakes. They were cupcakes with a moist chocolate cake base filled with caramel sauce, topped with peanut butter cream cheese icing, a piece of snickers and MORE caramel sauce mmmm.

Do not skip the buttermilk in this recipe because it makes the cupcakes so moist and decadent. Like Sally mentions in her recipe, if you are unable to find buttermilk you can make some using white vinegar or lemon juice with milk. 

The recipe doesn't actually include filling the cupcakes with caramel but for a little extra flourish, squeeze a little bit of caramel sauce into the middle of the cupcake batter when it is in the cupcake bases, this makes for a sweeter and even moister cake.
